I would rather use 6D Mark II purely due to that flip out screen and touch to shoot option, but if the quality of the images is worse then the 5D Mark III then I'll probably get that instead. This question relates only to dynamic range and image quality, as opposed to camera use/ features. All responses much appreciated.

To analyze, you can use dcraw and hraw tool. How I use them in the terminal in Ubuntu: § dcraw -E -4 -j -t 0 -s all 6D-II-raw-file.CR2. Open 6D-II-raw-file_0.pgm in GIMP or PS and count the black pixels to the left and on the top. With 6D II, it is 120px and 44px. § hraw analyze -i 6D-II-raw-file_0.pgm -m 120 44 -c G.

When it comes to DR, the 6D.2 performs identically to the 5D.2 up to ISO 800 and improves a little over the 5D.2 beyond that. The 5D.2 was hardly a bad performer, being the workhorse of many a pro, and even used to shoot over 20 Hollywood movies/TV shows including Black Swan, 127 Hours, The Avengers, Thor, House M.D. etc
The Canon 6D Mark II is decent in terms of viewfinder and LCD performance, but nothing special. The 5D Mark IV, on the other hand, is firmly a professional camera and it has a viewfinder and LCD to go with that designation. On the 6D Mark II, you get a standard 3” rear LCD, with 1040K dots.
Plus, the Canon 11-24mm F/4 is a really great lens and not something available from the other systems. But, I have to be honest, I would have loved to have some extra dynamic range from time to time, and my Canon 5D Mark II, and then Mark III, have definitely fallen short of the competitors in this category.
Similarly, Bill Claff has measured the engineering dynamic range of the 6D Mark II to be 11.1 EV at the pixel level, at 12.7 at ISO 160 for the 5D Mark IV (its highest dynamic range). So those 6D II and 5D IV figures are off by a stop.
